Vaniljekranse (‘vanilla wreaths’) Christmas biscuits with butter are a very traditional Christmastime Danish recipe. Ingredients for 20 biscuits: 200 g soft butter, 150 g extra-fine caster sugar, the seeds of a vanilla pod, 1 egg, 75 g chopped almonds, 240 g 00 flour, a pinch of salt, icing sugar for the final dusting. Preheat the oven to 180°. Place the butter in a bowl and whip it with the vanilla seeds and sugar, then incorporate the egg. Add the chopped almonds and flour and mix well. Transfer the soft dough into a piping bag with a star nozzle and form circles of dough about 5 cm in diameter on a baking tray lined with baking paper. Bake for 8 to 10 minutes, until the biscuits start to turn golden brown. Take the Vaniljekranse out of the oven, let them cool, place them on a Christmas plate, sprinkle with icing sugar and serve.
