
Whisky is undergoing a global identity shift, and Denmark is no exception. Danish whisky, a relatively new phenomenon, is gaining recognition thanks to the efforts of ten pioneering distilleries—including Stauning, Fary Lochan, Thy, and Copenhagen Distillery—which have joined forces to publish the Danish Whisky Manifesto. Their aim is to establish shared production standards, promote transparency, and ultimately secure geographical indication status at both EU and global levels.
Inspired by the 2004 New Nordic Food Manifesto, the Danish Whisky Manifesto sets strict criteria: to be labeled “Authentic Danish Whisky,” a product must be mashed, fermented, distilled, and aged for at least three years in Denmark, using mostly Danish grains. Additives like sweeteners and coloring are banned. From 2030, only whisky made entirely from certified Danish grains may use the official label without disclaimers. This national move is also tied to a larger effort: the ‘Nordic Whisky Collaboration’, involving distillers from Sweden, Norway, Finland, Iceland, Greenland, Åland, and the Faroe Islands, committed to promoting Nordic grain heritage and whisky excellence.

Spotlight on Stauning Whisky – Pioneer of Danish Whisky
Founded in 2005 in the remote village of Stauning, this distillery was born from a dream shared by nine friends (a doctor, a chef, a butcher, a teacher, a helicopter pilot, and four engineers). Without prior knowledge of whisky-making, they used local resources—barley from nearby farms, peat from surrounding fields, and even old kitchen equipment—to begin distilling in a former slaughterhouse. Their DIY methods and innovative approach quickly gained international attention, allowing them to grow into a state-of-the-art distillery with 24 copper stills.
Stauning Whisky Highlights:
1. Stauning Rye (48%)
A bold rye whisky made from 51% rye and 49% malted barley, distilled over direct flame in copper stills, and aged in virgin American oak barrels. Unfiltered and full-bodied, it delivers rich chocolate and toasted nut notes—ideal for mixing or sipping.
2. Stauning Curious (43%)
Part of the experimental Research Series, this young, peated rye (70% malted Danish rye) combines sweet peat smoke with earthy spice. Crafted using direct-fired stills and floor-malted grain, it’s best enjoyed fresh or in a Highball.
3. Stauning Bastard (46.3%)
Another Research Series entry, this rye whisky finishes for three years in ex-Mezcal barrels, then rests six months in toasted American oak. Expect sweet smoke, pipe tobacco, cinnamon, and orange peel—ideal for sipping neat.
4. Stauning Peat (47%)
A single malt made with peat-malted Danish barley, double-distilled in copper stills. The use of local peat and heather gives this whisky unique floral and cocoa notes—distinctly different from Islay peated whiskies. Aged in Maker’s Mark barrels.
5. Stauning El Clásico (45.7%)
A rye whisky with a final maturation in Vermouth casks. This adds herbal bitterness and a sweet-spicy finish to its warm amber core. Complex and aromatic, it bridges the world of whisky and aromatized wines.
Cultural and Political Impact:
Danish Minister for Tourism, Morten Dahlin, praised the initiative, emphasizing its value in boosting Danish gastronomy and regional pride. Danish whisky is now exported to over 20 countries, including the U.S. and China, and the new manifesto is set to elevate its reputation further.
